National Jerky Day

Let me start by saying, I love jerky. It is one of my favorite snacks. The price of jerky though is kinda ridiculous so I decided a couple of years ago to simply make my own. Jason bought me an Excalibur dehydrator when we first started dating (he really tried to impress me). I have used that dehydrator so much. It has been one of the best gifts I have ever gotten. My dehydrator comes with 9 trays and a 26 hour timer. The thermometer is an adjustable one that goes from 105 degrees to 165 degrees. I have made anything from flax seed crackers, banana chips, dried celery and herbs, and of courses my own jerky. I have to say, the jerky is my all time favorite. The cool thing about the Excalibur is that you can purchase the sheets that I use to make my crackers. When not using the sheets, the dehydrator racks look like plastic canvas which is great to dry out whatever is in the dehydrator.
Making your own jerky in the Excalibur is extremely simple to do. I usually get the stir fry beef at the local grocery store. Now, I do bu a lot of my stuff organic but sometimes I have to settle with the stir fry beef. I don't mind that because I don't eat jerky but a couple of times a year. All of the other meat I buy is usually the organic free range meat. My ultimate goal is to go vegetarian with the exception of eating eggs on occasion. Anyway, I always tend to digress, so back to my awesome jerky.
There are many many recipes out there for jerky. Since I am a simply person, I always pic the Worcestershire sauce and liquid smoke. I let both of those soak in a glass bowl with my beef for about 2 days in the fridge. When that is done, I simply put it in the dehydrator and set it for about 12 hours on 145 degrees. Sometimes I add pepper for a little something extra.
If you are looking for an amazing dehydrator, I would highly recommend the Excalibur. They are very reasonably priced. They have actually gone down about 100 bucks since Jason purchased mine.
